- 6 oz. fresh salmon fillet, skin removed and chopped into 1/4-inch cubes or 1 (7 1/2 oz.) can salmon, drained
- 2 mushrooms, minced
- 1 Tbsp. celery, chopped
- 1 Tbsp. onion, chopped
- 1 Tbsp. fresh chives, chopped or 1 tsp. dried chives
- 1 garlic clove, finely chopped
- 1 egg white
- 1 Tbsp. fresh basil, crushed, or 1 tsp. dried
- 1 Tbsp. vegetable oil
Directions

1Place salmon in mixing bowl, stir in the mushrooms, celery, onion, chives, garlic, egg white and basil.

2Shape into 2 patties. Heat vegetable oil in a saute pan until hot.

3Add salmon cakes, cook for 2 minutes on each side.

4Careful when turning them over. Serve with steamed vegetables.
