Salmon Canapes

Ingredients

  • 1 can (7 3/4 oz.) red salmon, drained, boned and flaked
  • 2 Tbsp. minced celery
  • 2 Tbsp. minced green onion, including some tops
  • 3 Tbsp. mayonnaise
  • 1/2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. liquid smoke
  • thinly sliced cucumber
  • crackers or toasted bread rounds
  • thinly sliced green onions
  • watercress sprigs

Directions

    In a small bowl, mix salmon, celery and minced green onion. Add mayonnaise, lemon juice, salt, pepper and liquid smoke.

    Mix well.

    Cover and chill at least 1 hour to develop flavor or up to 24 hours.

    Just before serving, place a cucumber slice on crackers or toast.

    Top with salmon mixture and garnish with green onion slices and watercress.
