- 1 (1 lb.) can salmon
- 1/2 c. bell pepper
- 1 Tbsp. pimento
- 2 eggs, beaten
- 1 c. whole milk
- 2 slices bread crumbs
- 1/4 tsp. salt and black pepper
- 1/2 c. onions
- 1 Tbsp. butter, melted
Directions

1Pick all bones and skin from salmon; save juice.

2Mash salmon. Saute onions and bell pepper in melted butter.

3Add pimento, bread crumbs, salt and pepper.

4Mix well.

5Add eggs and milk, mixing well.

6Place into a well-greased casserole dish and bake 1 hour at 350°.
