Salmon Latkes

  • 1 pound red salmon canned
  • 1/2 cup onion grated
  • 1 large egg
  • salt
  • pepper to taste
  • horseradish
  • oil for frying

Directions

    Remove skin and bone from salmon and drain. Add grated onion, egg and enough matzo meal to handle easily. Shape into small latkes and fry in hot oil. Serve with horseradish sauce.

    Freezing tip: place latkes on cookie sheet after frying and then freeze. After frozen, lift from sheet and place in plastic bag. To serve, heat in oven together with sauce.
