Salmon Lemon Loaf

Ingredients

  • 1 (1 lb.) can salmon (include liquid)
  • 1 tsp. grated lemon rind
  • 2 Tbsp. lemon juice
  • 1/2 c. onions, chopped
  • 1 1/2 c. bread crumbs
  • 1/8 tsp. Tabasco sauce
  • 1 tsp. sugar
  • 2 eggs, slightly beaten
  • 1/2 c. fresh pepper, chopped
  • salt and pepper to taste

Directions

    Flake salmon.

    Combine all other ingredients. Spoon into oiled quart loaf pan.

    Bake at 350° uncovered with lemon slices over the top for 40 minutes.

    Serve with a white mushroom or lemon sauce.
