Salmon Lemon Loaf

Ingredients
- 1 (1 lb.) can salmon (include liquid)
- 1 tsp. grated lemon rind
- 2 Tbsp. lemon juice
- 1/2 c. onions, chopped
- 1 1/2 c. bread crumbs
- 1/8 tsp. Tabasco sauce
- 1 tsp. sugar
- 2 eggs, slightly beaten
- 1/2 c. fresh pepper, chopped
- salt and pepper to taste
Directions

1Flake salmon.

2Combine all other ingredients. Spoon into oiled quart loaf pan.

3Bake at 350° uncovered with lemon slices over the top for 40 minutes.

4Serve with a white mushroom or lemon sauce.
