Salmon Loaf

Ingredients

  • 1 lb. can salmon, drained
  • 2 Tbsp. melted butter
  • 2 eggs, separated
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1 c. scalded milk
  • 1/2 c. soft bread crumbs
  • 1 tsp. lemon juice

    Remove bones from salmon.

    Add all ingredients, except egg white.

    Beat the egg white until stiff and fold into the salmon mixture carefully.

    Place in buttered loaf pan and bake in a moderate oven (300°) until brown.

    Serve with cream of mushroom sauce made by heating 1 can of mushroom soup and adding 1 teaspoon Worcestershire sauce.
