- 3 large onions, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 2 large cans pink salmon
- 4 large eggs
- 1/2 c. cracker crumbs, finely crushed
- salt
- black pepper
- onion powder
- garlic powder
- 1 extra egg
Directions

1Saute onions, bell pepper and celery in small amount of oil until the vegetables are limp.

2Open and drain 2 cans of salmon. Put in mixing bowl and take off as much skin and center bones as you can.

3Mash salmon and add eggs.

4Add vegetable mixture; blend well.

5Add cracker crumbs.

6Add salt, pepper, onion powder and garlic powder to taste.

7Add extra egg.

8Spray a 9 x 14-inch Pyrex dish with Pam.

9Put mixture in.

10Bake about 1 hour at 350°.
