Ingredients

  • 2 c. (1 lb. can) pink salmon, drained and flaked, reserve liquid
  • 1 Tbsp. lemon juice (optional)
  • 1/2 c. salmon liquid (add milk if necessary)
  • 2 Tbsp. minced green pepper
  • 2 Tbsp. minced onion
  • 1 c. dried bread crumbs (3 slices)
  • 1/2 c. chopped celery (optional)
  • 2 eggs, slightly beaten
  • pinch of salt
  • pepper to taste
  • 1 c. medium white sauce

Directions

    Add lemon juice to salmon.

    Combine remaining ingredients with salmon.

    Spoon into a shallow buttered mold or 1-quart loaf pan. Bake 40 to 50 minutes in 350° oven or until golden brown and firm. Serves 4 to 6.
