  • 1/2 c. rice
  • 2 eggs
  • 1 c. milk
  • 1 lb. canned or cooked fresh salmon
  • 1 Tbsp. chopped parsley
  • 2 Tbsp. lemon juice
  • 1/4 c. margarine, melted
  • 1 c. fine bread crumbs

Directions

    Cook rice.

    Beat eggs and combine with milk and rice.

    Flake salmon and add with remaining ingredients.

    Toss butter and crumbs and sprinkle on top.

    Bake at 350° for 40 - 45 minutes.
