- 1/2 c. rice
- 2 eggs
- 1 c. milk
- 1 lb. canned or cooked fresh salmon
- 1 Tbsp. chopped parsley
- 2 Tbsp. lemon juice
- 1/4 c. margarine, melted
- 1 c. fine bread crumbs
Directions

1Cook rice.

2Beat eggs and combine with milk and rice.

3Flake salmon and add with remaining ingredients.

4Toss butter and crumbs and sprinkle on top.

5Bake at 350° for 40 - 45 minutes.
