Salmon Mousse

Ingredients

  • 1 pkg. gelatin
  • 1/4 c. cold water
  • 1/2 c. boiling water
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. grated lemon rind
  • 1/2 tsp. Tabasco sauce
  • 1/4 tsp. paprika
  • 1/4 tsp. salt
  • 2 c. canned red salmon, drained and chopped
  • 1 Tbsp. chopped capers
  • 1/2 c. whipping cream
  • 3 c. cottage cheese

    Soften gelatin in cold water.

    Add boiling water and stir until dissolved; cool.

    Add mayonnaise, lemon juice and rind, onion, Tabasco, paprika and salt.

    Mix well.

    Chill to consistency of unbeaten egg white.

    Add salmon and capers; beat well.

    Whip cream and into salmon mixture.

    Turn into 5 1/2 cup oiled fish mold.

    Add cheese and fill mold.

    Chill until set.

    Unmold on serving platter.

    Garnish with watercress and lemon slices.
