Salmon Mousse

Ingredients
- 1 (15 1/2 oz.) can salmon
- 1 envelope unflavored gelatin
- 3 Tbsp. lemon juice
- 1/2 c. peeled, seeded and chopped cucumber
- 2 Tbsp. each: chopped onion and celery
- 1/2 tsp. dill weed, crushed
- 1/2 c. mayonnaise
- 1/4 c. half and half
Directions

1Drain salmon, reserving liquid; flake.

2Add cold water to reserved liquid to equal 3/4 cup.

3Soften gelatin in liquid.

4Heat over medium heat until dissolved.

5Mix first 7 ingredients well in food processor or blender.

6Blend in mayonnaise and half and half until entire mixture is smooth.

7Pour into lightly oiled 4-cup mold.

8Chill until firm, about 6 to 8 hours.

9Unmold onto platter. Garnish as desired.

10Serve with crackers.

11Garnish with fresh dill and thinly sliced lemon.
