Salmon Phyllo Tarts

Ingredients

  • 9 oz phyllo pastry
  • 2 tbsp butter, melted
  • 14 oz full-fat soft cheese
  • 2 tsp curry powder
  • 2 None red-skinned apples, cored and diced
  • 8.5 oz Gravlax (marinated smoked salmon) or plain smoked salmon, cut into thin strips
  • None None Fresh dill sprigs, to garnish

Directions

    Preheat the oven to 400°F. Cut the phyllo pastry sheets into 36 squares, 4 x 4 inches each. Take three of the squares and brush lightly with melted butter. Stack the buttered squares, each slightly offset. Press buttered-side down into one hole of a 12-hole muffin pan. Repeat with the rest of the pasty squares and butter.

    Bake for 10-12 mins until the pastry is crisp and golden. Leave to cool. Mix together the soft cheese and curry powder and stir in the diced apple. Season to taste.

    Fill the phyllo pastry cups with the soft cheese mixture and top with the salmon strips. Garnish with fresh dill.
