- 1/3 c. rice
- 1 c. water
- 1/8 tsp. salt
- 1 tsp. margarine
- 2 eggs, divided
- 1 (6 1/2 oz.) salmon, drained
- 3/4 c. skim milk
- 2 c. frozen peas
- 1/2 tsp. parsley flakes
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 4 slices low-fat Swiss cheese
Directions

1Bring rice to boil in salted water; cover and simmer 14 minutes.

2Mix with fork and stir in margarine and 1 beaten egg. Place in 9-inch pie pan sprayed with vegetable pan spray.

3Press against sides and bottom of pan to make crust.

4Spread salmon evenly over rice.

5Heat milk and peas to simmer.

6Add seasonings. Beat remaining egg.

7Gradually stir in milk mixture.

8Pour over salmon.

9Layer slices of cheese over top.

10Bake in a 350° oven for 25 minutes.
