- 8 ounces salmon
- 1 cup mashed potatoes
- 1 small onion, finely chopped
- 1/2 cup all-purpose flour
- 2 teaspoons baking powder
- salt
- black pepper
- 1/4 cup chopped parsley
- oil, for shallow frying
Directions

1Drain and flake salmon, reserving liquid.

2Combine salmon, reserved liquid, potato and onion.

3Sift flour and baking powder together into salmon mixture.

4Season with salt and pepper to taste.

5Add parsley. Mix well to combine.

6Divide mixture into 8 even sized portions. Shape into rounds.

7Heat oil in a large frying pan.

8Add rissoles and cook until golden on both sides.

9Drain on absorbent paper.
