- 3 Tbsp. butter
- 1 c. milk
- 2 heaping Tbsp. flour
- 5 eggs, separated and beaten
- 1 jar pimento cheese
- 1 tsp. salt
- 1 can salmon
- shredded almonds
Directions

1Make a cream sauce with the first 3 ingredients by melting butter, adding flour and slowly adding milk.

2Add cheese to this and then take off burner. Add well-beaten egg yolks and salmon, crushed fine.

3Fold in stiffly beaten egg whites. Put in buttered mold and bake in pan of hot water 30 to 40 minutes at 350°. When nearly done, cover with shredded almonds.
