  • 3 Tbsp. butter
  • 1 c. milk
  • 2 heaping Tbsp. flour
  • 5 eggs, separated and beaten
  • 1 jar pimento cheese
  • 1 tsp. salt
  • 1 can salmon
  • shredded almonds

    Make a cream sauce with the first 3 ingredients by melting butter, adding flour and slowly adding milk.

    Add cheese to this and then take off burner. Add well-beaten egg yolks and salmon, crushed fine.

    Fold in stiffly beaten egg whites. Put in buttered mold and bake in pan of hot water 30 to 40 minutes at 350°. When nearly done, cover with shredded almonds.
