- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 (16 oz.) can evaporated milk
- 1/2 c. water
- 1/4 tsp. salt
- 4 eggs
- 1 can red salmon
Directions

1Make sauce of butter, flour and salt, adding milk gradually along with water.

2Cook until thick.

3Pour over stiffly beaten egg yolks.

4Add salmon.

5Beat egg whites stiff and fold into sauce. Pour into buttered dish, set into pan of hot water.

6Bake at 350° for 45 to 50 minutes.

7Serves 6.
