Salmon & Spinach Strata

  • 8 slices whole wheat bread, cut into 1-inch squares
  • 1 pkg. (300 g) frozen chopped spinach, thawed, drained
  • 1 red pepper, chopped
  • 2 cans (213 g each) salmon, drained, flaked Walmart Supercenter 1 lb For $5.00 thru 02/14
  • 1 cup Cracker Barrel Shredded Light 4 Cheese Italiano Cheese
  • 4 whole eggs
  • 4 egg whites
  • 2-1/4 cups skim milk
  • 1 tsp. dry mustard
  • 1 tsp. dill weed
  • 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese

Directions

    Spread half the bread onto bottom of 13x9-inch baking dish sprayed with cooking spray.

    Cover with layers of half each of the spinach, peppers, salmon and shredded cheese.

    Repeat layers.

    Beat next 5 ingredients with whisk until well blended; pour over ingredients in baking dish.

    Cover with foil.

    Refrigerate 4 hours.

    Heat oven to 375 degrees F. Bake strata, covered, 1 hour or until centre is set and top is lightly browned, uncovering after 30 min.

    Sprinkle with Parmesan.
