- 5 lb. ripe tomatoes
- 3 c. chopped onion
- 1 c. chopped peppers (hot)
- 1 c. cider vinegar (5% acidity)
- 3 1/2 tsp. salt
Directions

1Dip tomatoes in boiling water to remove skins.

2Core and chop tomatoes into a large saucepan.

3Combine all the ingredients. Bring to a boil, stirring often.

4Reduce heat and simmer 30 minutes or to desired thickness.

5Immediately fill hot pint jars with salsa and leave 1/2-inch headspace.

6Make sure all air bubbles are out of jars.

7Wipe jar tops, put on hot lids and seal. Process in boiling water bath for 15 minutes.
