  • 1 lb. boneless, skinless chicken
  • breasts, cut into strips
  • 1 pkg. (1-1/4 oz.) taco seasoning
  • 2 tbsp. canola oil
  • 1 can (14 oz.) diced tomatoes, undrained
  • 1/3 cup peach preserves
  • Cooked rice
  • noodles

Directions

    Coat chicken strips with taco seasoning; saute in a large skillet until done.

    Stir in tomatoes and peach preserves; simmer for 10 minutes.
