Ingredients
- 1 1/2 c. minced onion
- 2 tbsp. butter
- 1 tbsp. flour
- 1 tbsp. chili pwdr
- 1 teaspoon grnd cumin
- 16 ounce. pkg. frzn corn, thawed
- 2 c. med. thick and chunky salsa
- 13 3/4 ounce. can chicken broth
- 4 ounce. jar minced pimento, liquid removed
- 8 ounce. container soft cream cheese
- 1 c. lowfat milk
Directions

1Saute/fry onions in large saucepan.

2Stir in flour and seasonings.

3Add in corn, salsa, broth and pimento.

4Bring to boil; remove from heat.

5Gradually add in 1/4 c. warm mix to cream cheese in small bowl, stirring till well blended.

6Add in cream cheese mix and lowfat milk to saucepan, stirring till well blended.

7Cook till thoroughly heated.

8Don't boil.

9Let simmer in pot for several hrs before serving to let flavor come out and chowder thicken.
