  • 24 medium tomatoes (may be skinned if desired)
  • 5 large onions, chopped
  • 4 to 6 jalapeno peppers, chopped finely
  • 4 to 6 green peppers, chopped fine
  • 1 large bunch cilantro leaves, chopped
  • 3 cloves garlic, minced
  • 3 Tbsp. brown sugar
  • 2 Tbsp. sugar
  • 2 Tbsp. salt
  • 3 cans tomato paste

Directions

    Cut tomatoes in chunks for chunky salsa or place them in blender for smooth salsa.

    Mix all ingredients and cook together until desired thickness.

    Pack in pint bottles and pressure cook at 10 pounds for 20 minutes.
