Salsa Quesadilla

  • 2 no flour tortillas
  • 3 tablespoons salsa
  • 50 g cheddar cheese, grated
  • 1 teaspoon olive oil

Directions

    Pour the olive oil into a heavy based pan and spread around with kitchen paper. Heat the pan.

    When hot, add a flour tortilla and cook both sides (about 2 minutes each side) over a medium heat.

    Remove the cooked flour tortilla and keep aside.

    Push the salsa through a sieve to drain off as much liquid as possible.

    Place the remaining flour tortilla in the pan and spread over the drained salsa.

    Sprinkle over the grated cheese and then placed the previously cooked tortilla on the top.

    Cook the quesadilla until the cheese melts (about 3 or 4 minutes).

    Cut into segments and serve hot.
