- 5 large ripe tomatoes, diced
- 1 c. chopped onion
- 3 large garlic cloves, crushed
- 1 tsp. salt
- 2 to 4 Tbsp. dry sherry (optional)
- 1/2 c. chopped green chilies, canned
- 1/4 to 1/2 tsp. cayenne
- 1/2 to 1 tsp. ground cumin
- minced parsley, basil and chives to taste
Directions

1Combine all ingredients except parsley, basil and chives in a saucepan.

2Bring to a boil, lower the heat and cover.

3Simmer for 40 to 50 minutes.

4Add minced herbs to taste.
