Ingredients

  • 5 large ripe tomatoes, diced
  • 1 c. chopped onion
  • 3 large garlic cloves, crushed
  • 1 tsp. salt
  • 2 to 4 Tbsp. dry sherry (optional)
  • 1/2 c. chopped green chilies, canned
  • 1/4 to 1/2 tsp. cayenne
  • 1/2 to 1 tsp. ground cumin
  • minced parsley, basil and chives to taste

Directions

    Combine all ingredients except parsley, basil and chives in a saucepan.

    Bring to a boil, lower the heat and cover.

    Simmer for 40 to 50 minutes.

    Add minced herbs to taste.
