Salsify Soup

Ingredients
- 3 1/3 cups vegetable stock
- 1 1/2 lb salsify, cleaned, peeled and sliced
- 1 tbsp olive oil
- 2 None white bread slices, crusts removed
- 3/4 cup heavy cream
- 2 tbsp butter
- Pinch None cayenne pepper
- Pinch None grated nutmeg
- 1 tbsp lemon juice
- None None Parsley, to garnish
Directions

1Bring the stock to a boil in a pan and add the salsify. Simmer for 18-20 mins, until tender.

2Dice the bread. Heat the oil in a frying pan and fry the bread, turning, until golden. Remove from the pan and set aside.

3Add the cream and butter to the soup then blend in a blender or by using an immersion blender. Season and stir in the cayenne pepper, nutmeg and lemon juice. Divide the soup between 4 bowls then sprinkle with croutons. Garnish with parsley then serve.
