Salted Cod Catalana Style

- 1 small can red pimentos
- 1/2 lb. salted cod, sliced
- 1/2 lb. cooked garbanzos or 1 can
- 1/4 c. toasted almond (slivers or sliced)
- 1/4 lb. French or Italian bread, sliced
- 1 1/2 c. sofrito (see sauces)
Directions

1The cod is available in Latin American grocery stores and should have been desalted by slightly cooking it in water several times (using fresh water each time).

2However, regular cod can also be used, in which case you'd add at least a teaspoon of salt.

3Once the sofrito is cooked, you add the cooked garbanzos, the toasted almonds and the sliced cod.

4Cook over low heat until flaky.

5Place on serving tray over slices of toasted or fried bread slices. Decorate with red pimentos.
