- 2 whole 4-ounce Salmon Fillets
- 1 whole Small Zucchini, Sliced
- 1 whole Small Yellow Squash, Sliced
- 1 cup Grape Tomatoes, Halved
- 5 ounces, weight Fresh Spinach, Rough Chopped
- Salt And Pepper
- 2 teaspoons Olive Oil, Divided Use, For Saute Pans
- 1/2 teaspoons Dried Dill
- 1/2 sticks Butter
- 1 pinch Salt
Directions

1For the dill butter, mix fresh or dried dill weed with soft butter and a pinch of salt.

2Serve at room temperature.

3For the salmon: Sprinkle salmon with salt and pepper and sear in a hot frying pan in a small amount of olive oil until flesh is opaque, about 3-5 minutes per side.

4Drizzle another saute pan with about 1 teaspoon olive oil and 1 teaspoon of the dill butter.

5Heat the pan over medium heat.

6Add vegetables and lightly saute them until they reach your desired level of crunch.

7Remove vegetables to a serving plate and top with a salmon fillet.

8Top hot salmon with a dollop of dill butter and serve.
