  • 2 whole 4-ounce Salmon Fillets
  • 1 whole Small Zucchini, Sliced
  • 1 whole Small Yellow Squash, Sliced
  • 1 cup Grape Tomatoes, Halved
  • 5 ounces, weight Fresh Spinach, Rough Chopped
  • Salt And Pepper
  • 2 teaspoons Olive Oil, Divided Use, For Saute Pans
  • 1/2 teaspoons Dried Dill
  • 1/2 sticks Butter
  • 1 pinch Salt

Directions

    For the dill butter, mix fresh or dried dill weed with soft butter and a pinch of salt.

    Serve at room temperature.

    For the salmon: Sprinkle salmon with salt and pepper and sear in a hot frying pan in a small amount of olive oil until flesh is opaque, about 3-5 minutes per side.

    Drizzle another saute pan with about 1 teaspoon olive oil and 1 teaspoon of the dill butter.

    Heat the pan over medium heat.

    Add vegetables and lightly saute them until they reach your desired level of crunch.

    Remove vegetables to a serving plate and top with a salmon fillet.
