Ingredients

  • 1 tbsp peanut oil
  • 1 tsp ginger, finely chopped
  • 1 clove garlic, crushed
  • 1 lb ground pork
  • 6 None scallions, finely sliced, plus extra for garnish
  • 1.5 oz ham, chopped
  • 1.75 oz mushrooms, chopped
  • 1.75 oz bamboo shoots
  • 1 oz bean sprouts
  • 2 tbsp dry sherry
  • 1 tbsp soy sauce, plus extra to serve
  • 1 tbsp oyster sauce
  • 8 large leaves iceberg lettuce
  • 1 None red chili, sliced (optional)

Directions

    Heat oil in a large frying pan on high. Saute ginger and garlic for 30 seconds, or until fragrant.

    Add pork and brown for 4-5 mins, breaking up the lumps with the back of a spoon as it cooks.

    Stir in scallions, ham, mushrooms, bamboo shoots and bean sprouts. Cook, stirring, for 3-4 mins.

    Stir in sherry and sauces. Spoon into lettuce leaves and sprinkled with extra scallion. Serve with extra soy sauce and sliced chili (if using).
