  • 1 c. yellow cornmeal
  • 1 1/3 c. cold water, divided
  • 1/4 c. plus 2 Tbsp. Parmesan cheese, divided
  • 1 lb. ground beef
  • 1 medium onion, sliced
  • 1 clove minced garlic
  • 1 small green pepper, sliced
  • 3/4 Tbsp. each: basil and oregano
  • 1/8 Tbsp. black pepper
  • 1 can refried or pinto beans
  • 1 c. or more shredded Mozzarella cheese and/or Cheddar cheese
  • 1 (8 oz.) can tomato sauce

    Heat oven to 375°.

    In a small bowl, mix the cornmeal with 2/3 cup of cold water.

    In a small heavy saucepan, bring the remaining 2/3 cup of water to a boil.

    Gradually add the cornmeal mixture to the boiling water.

    Lower heat and whisk with a fork until thick, about 3 minutes.

    Remove from heat and stir in 2 tablespoons Parmesan cheese.
