  • 1 large onion, sliced into rings
  • 2 spring onions, cut into 3cm lengths
  • 1 clove garlic, crushed
  • 1 teaspoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
  • 3 teaspoons curry powder
  • 1 rump steak, sliced finely
  • 2 teaspoons soy sauce
  • 1/2 cup coconut milk
  • 2 tablespoons KRAFT Crunchy Peanut Butter
  • 2 tablespoons chopped fresh coriander

Directions

    Heat a frying pan or wok, add a little oil and stir fry onion, spring onion, garlic, lemon rind and curry; cook for 1 minute until onion is tender.

    Cook beef in small amounts, stir frying until just browned.

    Add combined soy sauce, coconut milk and peanut butter, stirring until smooth.

    Reduce heat and simmer 5 minutes.

    Stir in coriander and serve with rice.
