Saucy Squash

  • 2 small yellow squash
  • 1 small zucchini squash
  • 1 pt. canned tomatoes or 3 medium fresh tomatoes, peeled
  • 1 large onion
  • 1 fresh jalapeno pepper
  • 1 Tbsp. butter or margarine
  • salt to taste

Directions

    Wash fresh squash and cut into small pieces.

    Cut onion into same size pieces (approximate).
  3. 3
    Chop pepper into small pieces. Cut up tomatoes or puree in blender, if desired.

    Place all ingredients in 2-quart saucepan.

    Bring to a boil, then reduce heat and simmer 20 minutes.
