- salt and pepper
- 1 clove garlic, pared and slivered
- 3 large onions
- 1 pt. vinegar
- 2 slices lemon
- 2 Tbsp. mixed pickling spices
- 4 c. water
- sugar
- tomato juice
- gingersnaps or sour cream
Directions

1Slash the roast and insert slivers of garlic in slits.

2Rub well with salt and pepper; place in glass or earthenware bowl. Cover roast with 1 sliced onion.

3Heat water, vinegar, lemon slices and pickling spices together.

4Pour hot marinade over roast.

5Cover tightly and refrigerate for 2 or 3 days before cooking.

6Turn occasionally so meat will be evenly marinated throughout.
