  • 3 to 3 1/2 lb. beef (round or rump)
  • 4 bay leaves
  • 1/2 tsp. peppercorns
  • 8 whole cloves
  • 2 medium onions, sliced
  • 1 small carrot, minced
  • 1 stalk celery, chopped
  • 1 1/2 c. red wine vinegar
  • 2 1/2 c. water
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. butter

    Put salt and pepper on meat.

    Place in deep ovenproof dish. Add spices and vegetables.

    Heat vinegar and water to boiling. Pour over meat.

    Cool, cover and refrigerate.

    Let marinate 48 hours, turning meat twice a day.
