- 3 to 3 1/2 lb. beef (round or rump)
- 4 bay leaves
- 1/2 tsp. peppercorns
- 8 whole cloves
- 2 medium onions, sliced
- 1 small carrot, minced
- 1 stalk celery, chopped
- 1 1/2 c. red wine vinegar
- 2 1/2 c. water
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. butter
Directions

1Put salt and pepper on meat.

2Place in deep ovenproof dish. Add spices and vegetables.

3Heat vinegar and water to boiling. Pour over meat.

4Cool, cover and refrigerate.

5Let marinate 48 hours, turning meat twice a day.
