  • 2 Tbsp. butter
  • 1/2 c. chopped onions
  • 1 qt. sauerkraut (sold in glass jars)
  • 1 potato, pared and grated (about 3/4 c., grated)
  • 1 tsp. caraway seed
  • boiling water (about 2 c.)

Directions

    Melt butter in heavy saucepan.

    Add onions and cook until golden yellow.

    Stir in sauerkraut and cook for 8 minutes.

    Mix in potato and caraway seed.

    Pour in the boiling water.

    Cook, uncovered, over low heat 30 minutes.

    Cover and continue cooking 30 minutes longer.

    Brown sugar and/or an apple may be added to give different flavor.
