- 2 Tbsp. butter
- 1/2 c. chopped onions
- 1 qt. sauerkraut (sold in glass jars)
- 1 potato, pared and grated (about 3/4 c., grated)
- 1 tsp. caraway seed
- boiling water (about 2 c.)
Directions

1Melt butter in heavy saucepan.

2Add onions and cook until golden yellow.

3Stir in sauerkraut and cook for 8 minutes.

4Mix in potato and caraway seed.

5Pour in the boiling water.

6Cook, uncovered, over low heat 30 minutes.

7Cover and continue cooking 30 minutes longer.

8Brown sugar and/or an apple may be added to give different flavor.
