- 1 lb. hot sausage
- 2 eggs
- 1 1/2 c. self-rising corn meal
- 1 can cream-style corn
- 1/4 c. vegetable oil
- 2 c. grated Cheddar cheese
- 1 large onion, chopped
- 3/4 c. milk
Directions

1Preheat oven to 425°.

2Grease skillet.

3Brown sausage and onion.

4Drain.

5Combine eggs, cornmeal, corn, milk and oil.

6Pour half of cornmeal mixture in skillet, then put sausage and onion mixture, then cheese, then pour remaining batter over all.

7Bake at 425° for 30 to 40 minutes.
