  • 1 1/2 lb. sweet Italian sausage
  • 1 1/2 lb. hot Italian sausage
  • 1/4 c. best-quality olive oil
  • 1 large yellow onion, coarsely chopped
  • 3 cloves garlic, peeled and minced
  • 2 green peppers, stemmed, seeded and coarsely chopped
  • 2 sweet red peppers, stemmed, seeded and coarsely chopped
  • 8 fresh Italian plum tomatoes, quartered
  • 1 c. spicy tomato sauce (best if homemade)
  • 1/2 c. red wine
  • 1/2 c. minced Italian parsley (plus additional for garnish)
  • salt and freshly ground black pepper

Directions

    Cut sausages into 1/2-inch slices.

    Heat olive oil in a skillet and add sausage pieces.

    Cook, stirring occasionally, until sausage pieces are well browned.

    Add onion and garlic; cook for another 5 minutes.
