Sausage Spinach Bread

- 2 loaves frozen French bread dough (most of these come packaged two to a pack)
- 1 lb. hot pork sausage
- 1 (11 oz.) pkg. frozen chopped spinach
- 10 oz. grated Mozzarella cheese
- 1/2 c. grated Parmesan cheese
- 1 egg, beaten
Directions

1Allow dough to thaw.

2Cook spinach according to package directions.

3Drain well.

4Brown sausage and drain off fat.

5Beat egg.

6Add about half of it to the drained spinach and reserve the rest to brush over the top of the bread.

7Working with one loaf of bread at a time, roll the bread into a rectangle, 9 x 13-inches. Spread half of the spinach, sausage and Mozzarella cheese over the dough.

8Sprinkle with half of the Parmesan cheese.

9Roll up jelly roll style; seal all edges tightly so that filling remains inside. Lightly score tops.

10Brush with beaten egg.

11Bake at 375° for 20 minutes, or until brown.

12Serve hot.

13Repeat with other loaf.
