Sausage Squash Special

Ingredients

  • 1 lb. sausage
  • 1 clove garlic, crushed
  • 4 c. sliced summer squash
  • 1/2 c. dry bread crumbs
  • 1/2 c. Parmesan cheese
  • 1/2 c. milk
  • 1 Tbsp. snipped parsley
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 2 beaten eggs

Directions

    Cook sausage and garlic until meat is brown; drain off excess fat.

    Cook squash, covered, in small amount of water until tender; drain.

    Stir squash and next 6 ingredients into meat; fold in eggs.

    Transfer to 10 x 6 x 1 1/2-inch baking dish.

    Bake at 325° for 25 to 30 minutes.

    Makes 4 to 6 servings.
