- 2 large Idaho potatoes
- 2 Tbsp. butter
- salt and pepper to taste
Directions

1Preheat oven to 375°.

2Bake potatoes for 1 hour.

3Break in half and scoop out pulp.

4Mash and add butter, salt and pepper to taste.

5Mash until smooth.

6In heavy black iron skillet, melt 1 tablespoon butter.

7Put potato pulp into skillet and spread in a flat cake.

8It is best when it is at least 1-inch thick.

9Saute very slowly until golden brown.
-
10Turn and brown on other side. Cut into wedges to serve.
