- 1 pound fresh spinach
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red chili flakes
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Directions

1Bring a large pot of water to a boil.

2Add spinach and stir for 30 seconds.

3Strain in a colander.

4Squeeze out excess water.

5Reserve spinach.

6In a saute pan over medium-high heat add olive oil.

7Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown.

8Add spinach and saute for 2 minutes.

9Add lemon juice, salt and pepper.

10Toss and serve immediately.
