Ingredients

  • 5 slices bacon
  • 1 14 cups chopped onions
  • 12 cup chopped celery
  • 12 cup chopped green pepper
  • 1 (14 1/2 ounce) canwhole tomatoes, undrained and chopped
  • 1 cup uncooked long grain rice
  • 34 cup water
  • 12 teaspoon salt
  • 14 teaspoon black pepper
  • 14 teaspoon ground red pepper
  • 18 teaspoon hot sauce

Directions

    Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet.

    Crumble bacon, and set aside.

    Saute onion, celery and green pepper in drippings over medium-high heat until tender.

    Stir in bacon, tomatoes, and remaining ingredients.

    Spoon rice mixture into a lightly greased 2 quart casserole.

    Cover and bake at 350F for 1 hour or until liquid is absorbed and rice is tender.
