  • 1 tbsp olive oil
  • 1/4 lb ground beef
  • 1/4 cup barbecue sauce
  • 1/4 cup sun-dried tomatoes
  • 2 oz feta cheese, crumbled

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup milk
  • 2 None eggs, lightly beaten
  • 1/2 cup olive oil
  • 2 oz Cheddar cheese, grated
  • None None tomato sauce, to serve

    Preheat oven to 400°F. Lightly grease and line a 12-cup muffin pan.

    To make the filling, heat oil in a large frying pan over high heat. Add ground beef. Brown for 4-5 mins. Add barbecue sauce, tomatoes and feta. Let cool slightly.

    Sift flour and baking powder into a large bowl. Add milk, eggs and oil. Whisk until just combined. Half-fill muffin recesses with batter. Distribute filling between recesses then cover with remaining batter. Sprinkle with grated cheese. Bake for 15-20 mins, until golden brown.

    Serve hot or cold with tomato sauce.
