Ingredients

  • 1 tbsp vegetable oil
  • 1 None medium onion, finely chopped
  • 1 clove garlic, chopped
  • 8 slices white bread, crust removed, cut into 3/4 inch pieces
  • 3.5 oz pizza cheese, grated
  • 3 None eggs
  • 3/4 cup milk
  • 2 oz fresh ricotta cheese
  • 1 tbsp fresh chives, chopped
  • 8 None cherry tomatoes, quartered

Directions

    Preheat oven to 350°F. Grease 4 - 8 oz ramekins then place on a baking tray.

    Heat oil in a small frying pan over medium heat. Add onion and garlic and cook for 1-2 mins, stirring occasionally, until onions are translucent. Combine with bread and pizza cheese then distribute between prepared ramekins.

    Whisk together eggs, milk, ricotta and chives. Season then distribute between ramekins. Set aside for 15 mins to soak. Arrange tomatoes over top and bake for 30-35 mins, or until just set. Allow to cool slightly before serving.
