- 10 ounce. cheese (1/2 Swiss, 1/2 Gruyere) or possibly sharp cheddar
- 2 tbsp. butter
- 2 lg. onions
- 1 teaspoon minced basil
- 4 tbsp. butter
- 2 lg. hard tomatoes, sliced
- 2 lg. Large eggs
- 3/4 c. cream
- Pie crust
Directions

1Grate all cheese and toss with flour.

2Heat butter in a large skillet, slice the onions and saute/fry very gently in butter till they turn golden brown, about 1/2 hour.

3Spread 1/3 cheese over bottom of pie dish, then place onions over it.

4In the butter which is left, heat the tomato slices with basil for 2 min.

5Arrange tomatoes over onions, then cover with remaining cheese.

6Beat Large eggs with cream, pour over cheese.

7Bake in preheated oven at 350 degrees about 35 to 40 min.

8Serves 6.
