- 2 c. sifted self-rising flour
- 1 c. (4 oz.) grated sharp Cheddar cheese
- 1 tsp. dry mustard
- 1 egg
- 1/2 tsp. chili powder
- 1 c. milk
- 1/4 c. vegetable oil
Directions

1Preheat oven to 425°.

2Grease 24 mini muffin cups.

3Stir together flour, cheese, mustard and chili powder in mixing bowl. Beat eggs in separate bowl; stir in milk and oil.

4Add liquid mixture to dry ingredients, stirring just until blended.

5Batter will be slightly lumpy.

6Spoon batter into prepared muffin cups, filling each 2/3 full.

7Bake for 13 to 15 minutes, or until golden brown.
