Ingredients

  • 3 lb. chicken breasts (boneless), cut up in serving pieces
  • 1/2 c. butter or margarine
  • 2 Tbsp. fine chopped chives
  • 1 clove garlic, fine chopped
  • 2 Tbsp. flour
  • 1 small can mushrooms, sliced
  • 4 c. hot cooked rice
  • 2 Tbsp. fine chopped parsley
  • 1/4 tsp. thyme
  • 1/4 tsp. pepper
  • 1 chicken bouillon cube, dissolved in 3/4 c. boiling water

Directions

    Fry chicken until brown in butter about 20 minutes.

    Spoon out all but 3 tablespoons of fat.

    Mix next 6 ingredients together and sprinkle over chicken.

    Pour in bouillon.

    Cover and cook over low heat 20 minutes or until chicken is tender.

    Add mushrooms with liquid.

    Cook 5 minutes longer.
