  • 1 Package of Jiffy Corn Bread Mix
  • 1C Corn
  • 1/2 C MInced Red Bell Pepper
  • 1/2 C Minced Onion
  • 11/2T Chopped Fresh Herbs
  • 2 Eggs
  • Oil for Frying
  • Freshly Ground Sea Salt

Directions

  1. 1
    Combine all ingredients except oil and sea salt in a large bowl until well mixed. Heat 2 inches of oil in a large sauce pan over medium heat. Drop batter by rounded tablespoons into the oil. Fry, turning once, until golden brown on both sides and cooked through. Drain on paper towels and sprinkle with freshly ground sea salt. Serve immediately
