  • 2 slices Bacon
  • 1/4 whole Sweet Onion
  • 8 ounces, weight Corn (1 Small Can)
  • 1/4 cups Sour Cream
  • 2 Tablespoons Parmesan Cheese
  • 3 Tablespoons Flour
  • 2 Tablespoons Whole Milk
  • 1/2 teaspoons Cumin
  • 1/2 teaspoons Chipotle Seasoning
  • 1 teaspoon Baking Powder
  • 1/8 teaspoons Salt To Taste
  • 1/8 teaspoons Pepper To Taste

Directions

    Dice and saute bacon and onion until cooked.

    Add to the rest of the ingredients to make a pancake-like batter.

    Drop by tablespoon into a hot nonstick pan coated with vegetable oil.

    Brown on one side (just like a pancake), flip and brown on the other side.

    Serve. Great with some extra sour cream on top.
