  • 2 pounds Yukon gold or all-purpose potatoes, peeled and cut into 2-inch chunks
  • 1 clove garlic, chopped
  • 3/4 cup 2% milk
  • 1 tub Knorr(R) Homestyle Stock - Chicken
  • 1 tablespoon I Can't Believe It's Not Butter!(R) Spread

    Cover potatoes and garlic with water in 4-quart saucepot. Bring to a boil over high heat.

    Reduce heat to low and simmer 10 minutes or until potatoes are tender; drain.

    Return potatoes to saucepot; mash. Stir in remaining ingredients until melted.

    - Stir in 1/2 cup crumbled blue cheese and 1/8 teaspoon ground black pepper.

    - Stir in 1/2 cup shredded parmesan cheese and 1 tablespoon finely chopped fresh parsley.
