- 1 pie shell (deep dish)
- 2 lb. pumpkin
- 6 oz. bacon
- 2 egg yolks
- 1/3 c. milk
- 1/3 c. fresh cream
- 3 garlic cloves (fresh)
- 1 Tbsp. flour
- 1 Tbsp. chopped chives
- salt
- pepper
- oil
Directions

1Cut pumpkin in slices; peel, dice and cook in 1/3 cup water over moderate heat with chopped garlic for 20 minutes or until dry. Meanwhile, brown the bacon.

2Drain the fat off and reserve.

3Mix egg yolks with flour, cream and milk.

4Add chopped chives.

5Oil lightly pie dish.

6Place pie shell in a deep dish.

7When pumpkin is cooked, puree it.

8Add bacon and egg mixture.

9Salt and pepper to taste.

10Pour into pie shell.

11Bake for 30 to 45 minutes in hot oven.
