- 2 lb. jumbo shrimp, peeled (leaving tails on)
- 1/4 lb. butter or margarine, softened
- 1 Tbsp. scallions, chopped
- 1 tsp. minced garlic (more to taste)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. minced fresh parsley
Directions

1Slit peeled shrimp down center to butterfly leaving tails on. Remove veins.

2Place butter in a bowl; mix in rest of ingredients to blend completely.

3Put shrimp on a shallow broiling pan.

4Place a dab of butter mixture on each shrimp.

5Broil about 5 minutes. Makes about 6 servings.
